Choc Chip Cookie Dough slice

 

I can't believe it. I made the above slice yesterday so that I could take a photo of it & this is all that is left. We had some visitors yesterday so it wasn't all eaten by my family but I had hoped that the slice would last a couple of days. Although I shouldn't be surprised, the first batch I made dissapeared as quickly. 

This is a great no bake slice.

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour.

Ingredients

225 g Bakers' Magic Gluten free flour

1/2 tsp Salt

125 g Brown sugar

50 g Honey

150 g Butter

15 g Vanilla extract

50 g Water

100 g White chocolate chips

150 g Milk chocolate chips

100 g Dark chocolate chips

   

Method

Line a slice tray with baking paper.

On stove top

Put the honey, sugar, water, vanilla, salt & butter into a saucepan over medium low heat.

When the mix starts to boil add in the Bakers' Magic Gluten free flour & stir vigorously until it comes away from the side of the pan.

Take off heat & allow to cool for ~15 mins.

Thermomix

Put the honey, sugar, water, vanilla, salt & butter into the TM bowl. Mix at 100 C speed 4 for 3.5 mins.

Add in the Bakers' Magic Gluten free flour & mix at 80 C for 2.5 mins speed 4.

Transfer to a mixing bowl & allow to cool for ~15 mins. I have left the dough in the TM bowl & mixed the chocolate chips in using the thermomix but I think you have more solid bits of chocolate if you mix them in by hand.

Both

Mix together the chocolate chips, set aside 150 g for the top of the slice.

Stir the slice dough every now & then to help cool it down. 

Mix in 200 g of the chocolate chips when the slice is warm but not hot. The chocolate chips will melt if the slice dough is above 40 C.

Pour slice mix into the tray & top with the remaining chocolate chips.

If you are in a hurry put the slice in the freezer for ~30 mins & then transfer to the fridge. Alternatively put the slice into the fridge for ~2 hours prior to serving.

Store in the fridge.
