Easy Peasy Chocolate Cupcakes


75 g Bakers' Magic Gluten free flour
1 Egg
1/2 - 1 tsp Baking powder
1 tsp Vanilla essence (optional)
75 g Butter or Oil
75 g Brown sugar
62 g Milk (~1/4 cup) or Water
20 g Cocoa


Butter or Oil- Use butter or oil depending on your preference. See below for the amount of liquid to use. 

Milk or Water - The amount of milk or water that you add will be dependent on the fat/oil you use. If you are using butter add 62 g of liquid. If you are using oil add in 70 g of liquid. 


Turn oven on to 170 C.
Put 8 patty pans in a muffin tin.
In a mixing bowl sift together Bakers' Magic Gluten free flour, baking powder & cocoa.
Add brown sugar to this mix & stir it in. Get rid of any lumps.

If using butter & milk

In a separate microwaveable bowl put in the milk, optional vanilla & butter.
Warm this mixture until the butter melts.
Add the egg to the milk/butter mixture & use a fork to mix.

If using oil & water

In a separate bowl whisk together the oil, egg, water & optional vanilla.


Mix together the dry ingredients & the wet ingredients.
Pour into the patty pans.
Bake in the oven for ~15 mins. The actual time will depend on your oven.

Decorate them with your favourite icing.
