Simple Choc Chip Cookies

 

 

My mother (she is 89 and living with us at the moment) was hankering for some chocolate biscuits - I went and bought some wheat based ones. I ate one (or two ) and thought that my gluten free biscuits were better. I ended up making a batch of 90 (little ones) for her and used for the first time my Tupperware dough press. Some of the choc chips got stuck - my daughter really enjoyed getting the last of the dough out (the dough didn't make it into the biscuits). 

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour. 

Ingredients
300 g Bakers' Magic gluten free flour
150 g butter
100 g caster sugar
100 g brown sugar
1 tsp Baking powder
2 tsp vanilla extract
1 egg
250 g dark chocolate chips

Method
Use a food processor to mix together all ingredients (apart from the chocolate chips) until you have a smooth dough.
Mix in the chocolate chips by hand or if you have a Thermomix mix in them in using the reverse button.
Cool the dough (30 mins fridge, 10 mins freezer). I flattened the dough out and covered it. 
The amount of dough you use per bikkie will depend on how big you want them. The bikkies shown were about 7 g each and I made 90 of them. The baking time will vary maybe 12 mins for 10 g of dough and approximately 18-20 mins for 20 g of dough.
Bake at 170 C on lined baking trays.
