Honeyed Macadamia Slice

 

I gave some of this Honeyed Macadamia slice to a work colleague, after eating it she said "That slice is worth getting fat for" and then added "Now you'll have to make it gluten free". I replied with a huge smile on my face "It already is". 

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour. 

Ingredients:
Base
225g Bakers' Magic gluten free flour
50g Macadamias
100g Caster sugar
200g Butter
50g Honey
1 Egg
25g Boiling water

Honey Caramel
300ml Thickened cream
125g Caster sugar
100g Honey
50g Butter
1 tsp Vinegar

250g Macadamias

 

Method:
Base
Dry ingredients - Blitz the flour, macadamias and sugar in a food processor.
Wet ingredients - Melt the butter with the honey and boiling water. Whisk in the egg. 
Combine the wet & dry ingredients with a wooden spoon/spatula. 
Put in the fridge for at least 30 mins. 
Turn the oven on to 180 degrees.
Line a slice tray with baking paper.
Take the base dough out of the fridge, knead it (it will be a little sticky) and transfer it to the slice tray. 
Bake in the oven for 20 mins.

While the base is baking prepare the Honey Caramel. 
Combine the ingredients in a heavy based medium sized saucepan over low heat. 
Increase the heat when the sugar has dissolved.
Boil the mixture for ~10 mins stirring regularly.

Bring the base out of the oven.
Turn the oven down to 160 degrees.
Sprinkle the macadamias over the top of the base. 
Pour the hot caramel over the macadamias. 
Bake in the oven for approximately 15 mins. 
Allow to cool before consuming - the slice is nice when still warm however it is fantastic when it has completely cooled.
