Choc Peanut Truffle Slice

 

If you love the combination of chocolate & peanuts this slice is an absolute winner. There is the crunch of the chocolatey base, the velvety smoothness of the white chocolate & peanut butter truffle & then it is rounded off with a silky milk chocolate containing crushed peanuts. Simply yum.

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour.

Ingredients

Base

100 g Bakers' Magic Gluten free flour

50 g Maize starch

20 g Cocoa

60 g Brown sugar

100 g Melted Butter

15 g Hot water

 

Truffle

200 g White chocolate - good quality

200 g Thickened cream

235 g Smooth peanut butter

 

Chocolate Topping

50 g Chopped peanuts

30 g Oil (I use Rice Bran Oil)

200 g Milk chocolate - good quality

Method

Base

Turn the oven on to 170 C.

Line a 28 cm x 18 cm slice tray with baking paper.  

Mix together in a mixing bowl the Bakers' Magic Gluten free flour, maize starch & cocoa. Mix in the brown sugar.

In another container melt the butter & add in the water.

Pour the wet ingredients onto the dry ingredients & stir until fully combined.

Transfer dough to the slice tray, press the dough to cover the base of the tray.

Bake for ~30 mins. The actual time will depend on your oven. If your oven has a hotspot turn the tray halfway through baking. 

Allow to cool before putting the truffle mix on top.

Truffle

Gently heat the cream, chocolate & peanut butter in a suitable container until the chocolate has melted. I use a microwave. Do not boil the cream & then add the peanut butter & chocolate - the mixture separates.

Gently stir the mix until it is uniform.

Pour over the top of the base & put the tray into the fridge for ~30 mins.

Chocolate Topping

Crush the peanuts in a food processor (if they are not already crushed).

Add in the oil & half of the chocolate. 

Gently heat the mixture to ~50 C stirring until the chocolate has melted.

Add in the remaining chocolate & stir until all the chocolate is melted. Gently heat the mix again if the second lot of chocolate isn't melting. 

Pour over the top of the truffle layer & put the tray back into the fridge.

Let the chocolate set before cutting the slice into small pieces.

Store in an airtight container in the fridge.
