Sticky Date Pudding

 

 

 I love sticky date pud with butterscotch sauce.

When I am out at a restaurant there will be two desserts I look out for - something of the chocolate variety or sticky date. Sometimes I will go back to a cafe simply because sticky date pudding is on the menu. There have been a number of times I have been disappointed when they stopped making it. As luck would have it my next door neighbour is a chef and makes the most amazing sticky date pudding - absolutely delicious. He kindly gave me the recipe and I have converted it for use with Bakers' Magic Gluten free flour. It is YUM!  

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour.

Ingredients

Pudding

125 g Dates chopped (dried)

250 ml Water

1/2 tsp Bicarbonate of Soda

50 g Butter

100 g Brown Sugar

1 Egg

100 g Bakers' Magic Gluten free flour

1/2 tsp Baking powder

 

Butterscotch Sauce

150 g Brown Sugar

300 ml Cream

100 g Butter

 

This recipe is sufficient for 6 serves (some may say 4). Serve hot with the Butterscotch sauce, cream &/or ice-cream. ENJOY! 

Method

Turn oven on to 170 C.

Grease an oven proof baking dish.

Put dates & water in a saucepan, bring to the boil & turn off the heat.

Add bicarb of soda to this & let the mixture cool.

Thermomix

Put the butter, sugar, Bakers' Magic Gluten free flour, egg & baking powder in the TM bowl.

Mix for 30 sec on speed 4.

Check all ingredients are mixed in.

Stand Mixer

Sift together Bakers' Magic Gluten free flour & the baking powder.

Cream the butter & brown sugar. 

Add the egg & continue to cream the mixture. Stop the mixture & scrape down the sides.

Add the flour mix & combine until all ingredients are incorporated.

Both

Gently stir the date/water mixture. The dates should have softened considerably. 

Combine the date mix & the flour mix, stir well.

Transfer to a greased baking dish.

Bake in the oven at 170 C for ~30 - 35 mins. The actual time for baking will depend on the oven used.

Butterscotch Sauce

When making the sauce it will increase in volume ~3X as it starts to boil, use a saucepan that will allow for this expansion.

Put all sauce ingredients into a saucepan, stir the ingredients while heating the mix.

Boil the sauce for 5 mins & then remove from heat.
