Hedgehog Slice

Although I made this Hedgehog slice with homemade Shortbread biscuits this is a great recipe to use up broken biscuits, crumbs, biscuits that are not getting eaten, etc.

Ingredients

250 - 350 g Plain biscuits*

175 g Butter

175 g Brown sugar

1 - 2 tbs Cocoa #

1 Egg

200 g Chocolate

30 g Oil

Optional GF Hundreds & Thousands

* I used 315 g of the Shortbread biscuits. The amount & type of biscuits will depend on how you like your Hedgehog slice. I find Hedgehog made with Marie biscuits (250 g not gluten free) is a tad too dry for my liking so I put in Scotch Finger biscuits (325 g also not gluten free) instead. The major difference between these types of biscuits is the amount of fat they contain. The extra fat in the Scotch Fingers makes the slice less dry & slightly fudgy but you do need to add more biscuits.

# The amount of cocoa will depend on the brand & how chocolaty you want your slice.

Variations

Peanut - Use more biscuit & add in 65 g of crunchy peanut butter & 65 g chopped peanuts.

Mocha - Use a bit more biscuit & dissolve ~2 tsp coffee in ~35 g water.

Walnut - Add in ~100 g of chopped walnuts.

I have made all of the above. Other variations could use coconut, glace cherries, other nuts, a caramel sauce instead of a chocolate one, marshmallows etc.

 

Method

Line a slice tin (20 cm x 30 cm) with baking paper.

Crush the biscuits leaving some big pieces. I usually put ~2/3 of the biscuits in a food processor & pulse it a couple of times. 

Put the egg in a small bowl & whisk it with a fork.

Combine the butter, sugar & cocoa in a saucepan. Gently heat the mixture until the butter has melted & the sugar dissolved.

Increase the heat until the mix starts boiling. When it starts boiling take the saucepan off the heat & quickly stir in the egg.

Stir in the crushed biscuits.

Transfer mix to the slice tin, pressing the mixture so that the top of the slice is roughly even.

Allow to cool before putting on the chocolate topping.

Melt the chocolate with the oil & pour over the slice. 

Optional - sprinkle with hundreds & thousands.  

Allow the chocolate to set before cutting it into pieces. Store the slice covered in the fridge.
