Grain Free - Lemon Cake

 

 

Ingredients

Cake

225 g Bakers' Magic Grain free flour

75 g Almond meal

225 g Caster sugar

250 g Butter

1/2 tsp Salt

6 Eggs

Zest of 2 Lemons

125 g Lemon juice (juice of 2 lemons)

 

The lemon flavour will depend on the lemons you use. If you find the lemon flavour too strong use the juice & zest of 1 lemon & add water to 125 g.

 

Optional 

Lemon Icing

150 g Icing sugar

50 g Butter

up to 20 g Lemon juice 

Zest of 1/2 lemon

or

dust with icing sugar 

 

Method

Turn the oven on to 150 C.

Grease a 20 cm round cake tin or large ring tin. 

Stand mixer

Mix together the Bakers' Magic Grain free flour, salt & almond meal.

Separate yolks & whites of 4 eggs. 

Measure 150 g of caster sugar into a mixing bowl, add in 2 whole eggs and 4 yolks. Mix together for ~8 minutes until the mixture is light & fluffy.

Melt the butter. While the mixer is going at a low speed slowly pour in the melted butter. When the butter has been incorporated add in the bread mix/almond meal & mix to combine. Mix in the lemon zest & juice. If you have one mixing bowl for your stand mixer transfer the batter to another bowl. Wash the stand mixer bowl.

Put 75 g of caster sugar into the mixing bowl & add the egg whites. Whisk until stiff peaks form.

Fold together the flour mix/yolk batter with the whisked egg whites. The mix will deflate a little while it is being folded and it won't be a smooth batter.

Spoon/pour batter into the tin & bake for ~50 mins. The time will depend on your oven.

Bring out of the oven & wait 5 mins before turning out the cake.

For a thin icing pour the icing over the cake while the cake is still hot. I prepare the icing while waiting to turn out the cake. I mix the icing in my Thermomix from 37 C to 60 C. The icing is easier to pour when it is warm/hot. If you don't have a Thermomix, put some boiling water in a small saucepan over a gentle heat. Mix the icing ingredients together in a small bowl & then put it over the saucepan. Use the icing when it has a pouring consistency.

Pour the icing over the cake. Allow the cake to cool & the icing to set before cutting in to it.

Or

Dust the cake with icing sugar.
