Choc Chip Too

Delicious dark chocolate, vanilla & coconut

Ingredients

1 tsp Baking powder

100 g Besan flour

125 g Butter

250 g Dark Choc Chips

50 g Coconut

1 Egg

200 g Potato starch

100 g Brown sugar

100 g Castor sugar

1 tsp Vanilla extract

Method

Preheat oven to 170o C.

Line two baking trays with baking paper.

Mixing

Thermomix

Set aside the coconut and dark chocolate chips.

Place all other ingredients into the TM bowl.

Mix for 1.5 mins at speed 4.

Ensure all ingredients are fully incorporated.

Add coconut & dark chocolate chips.

Mix for 30 sec on Reverse + speed 1.

Stand Mixer

Sift together baking powder, the besan flour and the potato starch.

Cream butter & sugar until light & fluffy.

Add the egg & vanilla & mix until the creamed mixture is uniform. You may need to scrape down the sides.

Add the sifted flour mix.

Mix until the flour is completely incorporated.

Gently mix in the coconut and dark chocolate chips.

Baking

Take approximately 25 g of the mixture and roll it into a ball between your palms. Place the ball on the baking tray. Repeat until all dough is used. There should be sufficient dough to make approximately 38 biscuits. I place them on the tray in a 4, 3, 4, 3, 4 configuration. There will be 2 balls left over - I usually squeeze one onto each tray.

Bake at 170o C for approximately 15 mins. I turn the trays at halfway through the cooking time as my oven has a slight hot spot in one corner. The actual baking time will depend on your oven & how big you make the balls.
